Christmas Pudding is an odd thing, personally I don’t like it, it’s just too heavy and rich for me. I do however like the flavours that go into the pudding so when we were watching some cookery show on saturday and they made these cupcakes I thought it would be a great way to use some left overs, and trust me we always have christmas pudding leftovers and Id much rather eat these than the real thing!
1 large egg
75ml milk
30g salted butter
2 tbsp sherry
125g left over christmas pudding
125g plain flour
1 tbsp baking powder
1/2 tsp mixed spice
75g caster sugar
1. Preheat oven to 350f/170c and line a muffin pan with 6 paper liners
2. Whisk the egg in a bowl. Add the melted butter, milk, sherry, and pudding
3. Sieve the dry ingredients into another bowl and then add the sugar and mix together. Make a well and add the wet ingredients
4. With a rubber spatula gently fold together until a soft batter forms
5. Fill 6 cupcake liners with the batter and the bake 20-25 minutes
For the frosting you could go with anything you fancied but I followed the original suggestion and made a simple sherry buttercream, very christmasy
125g icing sugar
50g salted butter
1-2 tbsp sweet sherry
1. Mix together the sugar and the butter and then add the sherry so you get the right consistency
