I remember that when I was a kid the height of sophistication at a birthday party was the butterfly cake, a fairy cake with its middle cut out and turned into miraculous butterfly wings, simple, cute and of course delicious. The little kid version of me didn't think there was anything wrong with simple and even after many a butterfly cake he definitely didnt get bored of those little cakes. These days however, that simple cake probably wouldn't meet most peoples standards, too easy, too plain, too boring. Thankfully you can still make a brilliant cupcake with minimal effort that looks so much better than the old school butterfly cake.
My friend Ruth, of The Pink Whisk fame, has come up with a brilliant recipe for Easter, in collaboration with Stork, a fluffy bunny cupcake. It takes no more effort than the old school butterfly cake but has way more visual appeal and a lot more going on in terms of flavour. I made a batch a few days ago and they were super quick to put together and using Stork With Butter means the cakes were light and fluffy and, as it can be used straight from the fridge, they took minutes to pull together. The decoration is in Ruth's characteristic simple and practical style, meaning it is easier to do than it looks.
