Do you remember the first cake you ate? Probably not, but if like me you grew up in the 80's and 90's there is a strong chance it might have been the butterfly cake. Simple and quick to make I remember these as a feature at all the school parties, every friends birthday party and I remember making them at home too. They were always the simplest cake, flavoured with whipped cream and a little jam. To give them a modern twist I have flavoured mine with passion fruit and coconut.
