Whenever someone asks me what to bake if they've never really baked anything before I always suggest a Victoria Sponge, it is very simple (especially if using the all-in-one method) and it teaches you a lot about baking as it uses some very basic baking techniques. However, just because you are making a classic recipe, doesn't mean you have to keep the flavours classic.
